Mixing the malt
An illustration showing 'mashing', one of the first processes in beer making, taking place at the Barclay, Perkins and Company brewery in Park Street, Southwark. From 'London: a Pilgrimage' by Blanchard Jerrold and Gustave Doré, 1872. Jerrold writes: "Mashing is the elementary process of beer making, and the object of these strange workers with wooden spades is to mix the malt thoroughly with the water. The result is an amber liquid, called wort."
